Here is a great snack to get you started!
SWEET POTATO HUMMUS
- 1 ½ cups cooked sweet potatoes (baked)
- 2 cups cooked chickpeas
- 2 tablespoons Italian parsley (chopped)
- ¼ cup olive oil
- 1/4 cup organic tahini
- 2-3 tablespoons lemon juice (1 lemon)
- 3 garlic cloves (minced)
- 2 teaspoons ground cumin
- ½ teaspoon cayenne pepper
- 1-1/2 teaspoons kosher salt
- ½ teaspoon Hungarian paprika
- ¼ teaspoon cumin
- Blend ALL ingredients in food processor until paste. Transfer to a bowl. Serve with Rice Chips.
